Red clover, native grasses, and fresh milk flavor this lovely mild cheese. This cheese is aged between 2-4 months giving it a sweet, mild flavor, and is made with summer and fall milk which imparts great richness and depth. Best described as a middle ground between our Lovely Young Cheese of the Spring and our BerleBerg. It makes a great addition to any cheese plate and is a superb melting cheese.Ingredients: organic raw cow milk, vegetable rennet, enzymes, and sea salt. Aged 60 days or more.
